Breakfast Bars – Yum!

Every morning I start my day off with a cup of Tetley tea and a homemade breakfast bar. Yum! A wonderful way to start the day! So I thought I’d share the love, enjoy :)

Breakfast Bars. Makes 8 bars.

1/2 cup unsalted butter
1/2 cup brown sugar
1/4 cup corn syrup
1/4 cup milk
1/2 tsp vanilla
1/4 tsp salt
3 cups quick oats
1/2 cup bran cereal
2 tbsp ground flax-seed
1 tbsp ground chia seed
1 tbsp sesame seeds

Pre-heat oven to 325 degrees.

Line a 8″ pan with parchment (I use glass).

Using a blender or food processor pulse bran cereal, sesame seeds and 2 1/2 cups oats until they resemble a coarse meal. Mix together with remaining oats and seeds.

In a medium sauce pan over medium heat, melt butter, brown sugar, corn syrup and salt. Remove from heat and stir in milk and vanilla.

Mix all ingredients together until combined well.

Firmly pack mixture into pan and bake for 15-20 minutes, the bars should be a light golden brown – tops should still look a little moist.

Remove from oven and cool completely before slicing.

  1. Hi Janet, try using Brown Rice syrup instead of the corn syrup. Corn syrup is a processed sugar and is bad for you and is in a lot of store bought stuff but you can avoid it! You can get brown rice syrup at the Bulk Barn in a jar!
