Banana Muffins

Every once in a while, I like to bake. A rookie baker, I didn’t inherit the baking gene that my mom and grandma have. I do basic baking; cupcakes, muffins, cinnamon rolls, granola bars – basic.

I have a pretty tasty muffin recipe for you! Courtesy of my friend, Melissa. She made these once for our craft night snack; they are simple and yummy!

Banana Muffins

  • Servings: 12-15
  • Difficulty: easy

1-1/2c flour
1tsp baking soda
pinch of salt
1 – egg
3/4c maple syrup
1/3c melted butter
1 tsp vanilla extract
2-3 very ripe bananas, mashed
Chocolate Chipits (as little or as many as you like)

Mix dry ingredients, add wet ingredients and viola! Sprinkle a few extra Chipits on top. Bake at 350 degrees for about 45 mins until golden brown – check at 30 minutes to be safe! Makes 12-15 muffins.

A nice treat served with a cup of tea (everything’s better with tea). Enjoy!
